Mango Salsa for Nachos

A bright, simple mango salsa built for nachos. Use ripe yellow mangos (Ataulfo/Champagne) — they're sweeter, softer, and less fibrous than the big red-green kind. Dice everything small so it scoops cleanly onto a chip, and drain off excess juice before topping so the nachos stay crisp.

Dice the mangos small (about 1/4"). Finely dice the red onion. Seed and mince the jalapeño. Chop the cilantro.

Combine and season

Ingredients

Combine everything in a bowl with the lime juice and salt. Taste and adjust lime and salt. Let it sit 10-15 min so the onion mellows and the flavors come together. Drain off excess juice before spooning over nachos.
