Warm the milk and wine (optional, can just do an extra cup of milk) on medium heat. Put in the sodium citrate and your seasonings. Put in the butter, cold. Gradually whisk in handfuls of cheese until everything is melted in, then turn off heat.
Step 3
Salt the pasta water and par-boil the shells (until they're just slightly undercooked).
Step 4
Grease a baking dish that's big enough to hold the pasta and cheese sauce. Pour in the drained pasta, and then the cheese sauce, and stir to combine. Cover and bake for 45 minutes. Then, uncover and bake for 30 minutes, or until you're happy with the level of browned. Let cool for a little before serving.
