Heat up milk to ~95F. Add yeast, stir. Let sit for ~8 minutes.

Mix together dry ingredients. Malt powder is optional but helps with the flavor and texture.

Prepare the rest of the wet ingredients. Mix the primed yeast into the dry ingredients, and then the tangzhong and the wet ingredients. Add the butter last.
Step 5
Let dough rise in a warm area until doubled in size.
Step 6
Shape your dough as desired, and preheat oven to 350F. Let the dough rise.
Step 7
Beat the egg, brush the loaves, optionally top with flakey salt, etc. Bake for 25 minutes or until slightly browned.
