Sautee onions and seasonings
Heat up pan with oil. Roughly dice onion, toss into hot pan. Add the salt, msg, and baking soda. The baking soda will help the onions to release their water, and turn them kind of jammy - it's normal for them to turn yellow. Once the onions have started to break down, add the garlic and rest of your spices. Cook, scraping down any fond that forms. Cook this until it starts to turn dark, and adjust any seasonings to taste.
