Sam's Savory Tomato Sauce

A nice, rich, tomato sauce recipe. Can be tossed in a blender if you prefer your sauce smoother, or left as is for a nice texture.

Step 1

Sauteéd onions

Ingredients

Heat up a saucepan with your butter and olive oil over medium heat (you don't want it them to burn). Dice the onion, sized to your preferences. If you're planning on blending this sauce, it doesn't matter. Toss the onion in the hot fat with the salt and give it a mix. Make sure the heat isn't too high - you want the onions to sweat, but not caramelize. Now, mince your garlic really small, and mix that into the onions. Let it cook until it's the onion is starting to get translucent.

Add spices

Note: spices and quantities are estimated. You should adjust this to your own taste. Mix all of your spices into the sautéing onion and garlic. Let this cook in the hot fat for a big, developing the fond (stuff that sticks to the pan) but scraping it off before it burns.

Step 3

Add tomato

Ingredients

Slowly pour in some vegetable broth to deglaze your pan, and then add your crushed tomato and tomato paste. Stir it and heat it up, lowering the heat as needed so that it doesn't splatter. Add vegetable broth as needed to adjust sauce thickness. Taste, and adjust seasonings accordingly. Cook until you're happy with the flavor and texture.
