Czernowitzer Challah

This isn’t a very sweet or eggy challah, but is instead light and fluffy and generously enriched with oil.

Step 1

Make yeast slurry

Ingredients

Whisk together the yeast and flour, and then whisk in the water until smooth. Let stand for 10-20 mins, or until it starts to ferment and puff up a bit.

Step 2

Bulk up yeast slurry

Ingredients

Whisk into yeast slurry until eggs are well incorporated and the sugar and salt have dissolved.

Step 3

Make the dough

Ingredients

Stir in all at once, either with your hands or a wooden spoon. Once the flour is reasonably absorbed, knead for 10 mins or so until smooth and soft.

Step 4

Start shaping

Ingredients

Divide into 2, shape as desired. Preheat oven to 350F.

Step 5

Bake the bread

Ingredients

Beat the egg, glaze your loaves when they’re risen to your tastes. Bake for 25- 35 minutes, until a little browned.
