Step 1
Make the pastry
Rub the cold butter into the flour, sugar and salt until it looks like coarse crumbs with some pea-sized pieces. Add the ice water a spoonful at a time until it just holds together. Flatten into a disc, wrap and chill.

Step 1
Rub the cold butter into the flour, sugar and salt until it looks like coarse crumbs with some pea-sized pieces. Add the ice water a spoonful at a time until it just holds together. Flatten into a disc, wrap and chill.
Step 2
Heat the oven to 200°C (400°F). Core the apples, slice them 3 mm thick, and toss with the sugar, lemon juice and cinnamon.
Step 3
Roll the pastry into a 30 cm round on a floured sheet of parchment. Fan the apples in overlapping rings, leaving a 5 cm border, then fold the border up over the fruit.
Step 4
Brush the folded edge with beaten egg and sprinkle with demerara. Bake until the pastry is deep golden and the apples are tender.
Step 5
Warm the apricot jam with a splash of water and brush it over the hot apples. Cool for 15 minutes before slicing.
