    Step 1

    Brown the butter

    Ingredients

Melt the butter in a small pan over medium heat and keep swirling until it smells nutty and the solids turn deep golden. Pour into a bowl and let it cool for a few minutes.

    Step 2

    Make the topping

    Ingredients

Stir the flour, oats, brown sugar and salt into the brown butter until it clumps. Chill while you prepare the fruit.

    Step 3

    Toss the apples

    Ingredients

Heat the oven to 190°C (375°F). Peel, core and slice the apples, then toss with the lemon juice, cinnamon and sugar in a baking dish.

    Step 4

    Bake

Scatter the topping over the apples and bake until the fruit bubbles at the edges and the top is crisp and brown.

    Step 5

    Rest and serve

Let it settle for ten minutes so the juices thicken, then serve warm with cold cream or vanilla ice cream.
