The Best Plum Torte

My all-time favorite. Be careful not to eat the whole thing in one go!

Step 1

Preheat oven to 350F and cream the sugar and butter

Ingredients

Feel free to substitute canola/vegetable oil! That's what I do.

Step 2

Add the flour, baking powder, salt, and eggs

Sift the flour. Salt optional. Beat well

Step 3

Spoon the batter into a spring form and add the plums

Ingredients

Halve and pit the plums. 8-10inch spring form. Place the plum halves, skin side up on top of the batter

Step 4

Top with sugar, lemon juice, and cinnamon

Ingredients

Sprinkle lightly with sugar and lemon juice, depending on the sweetness of the fruit. Sprinkle with about 1 tsp of cinnamon, depending on how much you like cinnamon.

Bake one hour at 350F

Ingredients

Bake one hour. Remove and cool; refrigerate or freeze if desired. Or cool to lukewarm and serve plain or with whipped cream. To serve a torte that was frozen, defrost and reheat it briefly at 300F. VARIATION: To make an apple-cranberry torte, follow directions for plum torte but peel, seed, quarter and slize two or three large baking apples. Arrange 1/2 cup of raw cranberries over the batter and top with the apple slices. Sprinkle generously with cinnamon; suqqeze 1/2 to 1 tbsp of lemon juice over the apples. Sprinkle with sugar.
